Historically, carving meat was considered a culinary art of the highest form only carried out by senior officials, in royal or aristocratic households, who were known as esquires tranchants.
These gentlemen performed their duties with swords by their sides to ward off any thief wishing to chance their arm whilst the precious meat was being cut. King Louis-Philippe of France (1773-1850) stood at the bottom of his table, at every meal, to carve meat for his family.
